Instructions
Step 1
Remove the prawnâs head, then peel off the shell, legs and devein. the prawnâs body. Rinse with cold water.
Step 2
Add coconut oil, shells and heads to the pot. Fry for a few minutes, until the shells change their colour, then add water. Bring it to a boil and cook for 10 minutes.
Step 3
When ready, lass them through a sieve and discard the shells.
Step 4
Add lemongrass, galangal, Thai chilli pepper and 6 torn kafir lime leaves. Cook for 10 minutes.
Step 5
Then add Tom Yum paste, torn mushrooms, prawns, juice from half lime, and coconut milk for extra creaminess. Check for the seasoning and adjust if needed.
Step 6
Add Thai parsley or cilantro and remaining lime leaves.
