Step 1
1. Make the koftas; in a bowl, combine the beef, half the ground coriander, half the cumin seeds, a pinch of sea salt and black pepper. Mix and form into 4 sausage-shaped koftas.

2. Drain and rinse the lentils. Heat a medium frying pan with
1 tbsp oil on medium-high heat. Add the koftas and cook for 3-4 mins, until golden brown. Add the lentils, remaining spices and 100ml water (50ml for 1 person). Stir and simmer for 5-7 mins, until most of the liquid has evaporated and the koftas are cooked through.
Step 3
3. Meanwhile; dice the mango into 1cm cubes. Roughly chop the coriander. Finely slice the onion. Peel the cucumber into ribbons. Zest and halve the lemon. Place everything into a mixing bowl with the juice from half the lemon (to taste), vinegar, honey and a pinch of sea salt. Toss to combine.

4. Finely dice the chilli (remove the seeds for less heat). Stir the yoghurt into the lentils and season with sea salt and black pepper.
Step 6
5. Spoon the lentils onto serving plates and top with the mango cucumber salad and koftas. Garnish with the chilli (to taste).
