This Lebanese Sfouf or “Semolina Cake” is a very simple, oil-based yellow cake, given its color with turmeric. Sfouf is an egg-free cake includes semolina and a short list of ingredients combined to give nutty texture that is just so hard to resist.

Instructions

Step 1
Grease a 30 x 40 cm Baking pan with the Tahini or Oil,
Step 2
Mix the dry ingredients (semolina, flour, turmeric, anise and baking powder) together in a large bowl.
Step 3
Mix the wet ingredients (canola oil, milk and the brown sugar) in another small bowl until the sugar is completely dissolved in the mixture.
Step 4
Combine the dry and wet ingredients and mix it very well, until you obtain a nice smooth yellow cake batter. If dough is too thick, you can add 1/4 cup of water.
Step 5
Pour in the batter into the baking pan. Let it rest for 10 minutes and then spread the pine nuts on top.
Step 6
Bake it at 180C degrees for 30 to 40 minutes until the pine nuts are golden.
Step 7
Wait for the cake to cool down and cut into small squares or diamonds shape.
Step 8
Enjoy with a cup of tea or coffee.
