Instructions
Step 1
Preheat oven to 400 degrees Fahrenheit
Step 2
Bring a pan of water to boiling. Add the potatoes and cook for 10 minutes. Drain and spread onto unlined baking tray. Season and roast for 20 minutes.
Step 3
Put the spinach into a colander and pour the just boiled water over it until wilted. Allow to cool. Squeeze out any water then roughly chop.
Step 4
Combine spinach, salmon, capers, cream cheese and half of the dill seasoning.
Step 5
Brush a filo sheet with some of the melted butter, top with another sheet then slice in half. Repeat to make 4 pastry rectangles.
Step 6
Pile 1/4 of the salmon filling into the center of each one. Brush the edges with butter then scrunch up into a parcel.
Step 7
Dab the outside and tops with more butter and put on parchment lined baking tray. Bake for 20 minutes, until golden.
Step 8
Meanwhile boil the broccoli for 3 to 4 minutes until tender.
Step 9
Divide the salmon parcels, broccoli and potatoes between plates and serve scattered with the remaining dill.
