Instructions

Step 1
cook the pasta according to instructions
Step 2
in a blender, add the beetroot, garlic, greek yoghurt, olive oil and lemon juice
Step 3
blend
Step 4
add salt and pepper to taste
Step 5
drain the pasta once cooked
Step 6
return pasta to pan and pour sauce over
Step 7
serve with a drizzle of olive oil and black pepper and an optional crumbling of feta
