Ingredients

600gartichoke hearts
canned, drained or Frozen and thawed
2 clovegarlic
minced
2 Tbspfresh mint leaves
chopped
2lemon juice
to taste
3 Tbspextra-Virgin olive oil
2 Tbsptahini
½ tspsalt
½ tspcracked black pepper

Instructions
Step 1
Pulse 1/2 of the chopped artichoke hearts, 1 clove garlic, 1 tbsp lemon juice, tahini, 1 tbsp olive oil, pinch of salt and the mint leaves in a food processor, pulse until finely smooth mixture.
Step 2
In a large bowl, whisk 1 minced clove of garlic, 1 tbsp lemon juice and 2 tbsp oil, salt and pepper, then toss with the other 1/2 of the chopped artichoke hearts, taste and adjust seasoning, let it rest for 10 minutes.
Step 3
In a large serving bowl, stir in the smooth artichoke mixture and the marinated chopped artichokes until combined.
Step 4
Just before serving, garnish the serving bowl with the chopped greens, a generous drizzle of olive oil and serve it with toasted bread as a starter or side
