This tasty soup seems really indulgent, even though it has a low energy density of just over 1 calorie per gram. Sourdough bread may also help to reduce hunger due to its positive effects on beneficial gut bacteria. Cheddar can be substituted as a cheaper alternative to Gruyere and vegans can replace this ingredient with a non-dairy substitute. This meal is great as a filling lunch or a dinner entree.

Step 1
Heat the oil in a large saucepan and add the onions, garlic and a sprinkle of salt. To caramelise the onions, cook on low heat for around 30 minutes then add the white wine and thyme and cook for a further 5 minutes. Sieve two teaspoons of cornflour into the stock ensuring that there are no lumps and add this stock to the pan. Cook on low heat for 15 minutes until the liquid has reduced to a soup-like consistency. Continue to heat or add further cornflour if the soup is too runny. In the meantime toast the sourdough bread and grate the Gruyere. Transfer the soup into two bowls and top with the sourdough bread and grated cheese.
