Instructions

Step 1
. In a large bowl beat butter with a mixer on medium until light and fluff y, scraping bowl occasionally. Add dill, chives, and pepper. Beat on low until combined.

2. Divide flavored butter among four pieces of plastic wrap. Shape each portion into a 4-inch log. Wrap each log in plastic wrap, then in foil. Freeze up to 3 months (tips, p. 4) or refrigerate up to 2 weeks.
Step 3
3. To serve, let butter stand at room temperature 30 to 60 minutes if chilled, 1½ to 2 hours if frozen, or until softened. Cut into slices.
Step 4
GREMOLATA BUTTER Prepare as directed, except substitute ⅓ cup finely chopped fresh Italian parsley, 2 tsp. lemon zest, and 2 cloves garlic, minced, for the dill and chives. Omit pepper.
Step 5
TARRAGON-SHALLOT BUTTER Prepare as directed, except substitute ¼ cup finely chopped fresh tarragon and 2 Tbsp. finely chopped shallot for the dill and chives.
