Step 1
Put the quinoa in a saucepan with the chicken stock. Bring to a boil and turn down to simmer for 18 minutes. Add the apricots and simmer for another 5 minutes. The water should be absorbed.
Step 2
Meanwhile, heat a large frying pan over a medium heat. Toss the chicken in the Cajun spice. Spray the pan with the cooking spray and fry chicken for 4-5 minutes until the chicken is cooked through.
Step 3
Add the spring onion, coriander and quinoa to the pan, season well and mix together.
Step 4
Serve with the Greek yoghurt.
