Instructions
Step 1
Microwave the sprouts until they are soft enough to mash with a fork. Drain the water and mash until smooth.
Step 2
Add the stuffing mix. Chop the spring onions and add, along with the garam masala. Leave to cool.
Step 3
Mix the tomatoes, red onions, green peppers, courgette together in a bowl. Add the sumac, chilli, garlic granules, mint, and a sprinkling of balsamic vinegar.
Step 4
Line a roasting tin with baking paper. Spoon the tomato and veg mixture evenly. Make balls with the stuffing mix and place them around the edges.
Step 5
Place the whole cabbage in the middle. Drizzle with olive oil, then sprinkle with harissa powder.
Step 6
Bake in the oven for one hour on gas mark 6.
