Instructions
Method:
Step 1
Soak the 4 seeds in water overnight and drain all the water from the seeds the next morning
Step 2
Chop the mixed nuts
Step 3
Roast all nuts and seeds and oats in a pan for 8-10mins over medium heat. Keep stirring to avoid them getting burnt
Step 4
Remove from heat and let sit
Step 5
In another pan, add the peanut butter and stir over medium heat, allow about 3mins for it to thin out and then add honey. Once it is all mixed together, let it bubble up for couple mins
Step 6
Add in the roasted seeds and nuts mixture. Mix until fully combined
Step 7
You can either place on dish lined with baking paper and pat it down to create an even layer, refrigerate it for 2-3 hours and cut into squares OR grab about 1.5 tbsp of the mixture and roll it into little balls. (I prefer rolling them in balls as they hold up better and don’t crumble and its a quicker and easier way)
Step 8
You can leave this out in a jar for 2 weeks in cool dry place or refrigerate it for upto a month. Have one or two per day either as a sweet snack after a meal or after breakfast.
