2wholemeal rolls
seeded

crunchy, mixed, seasonal, such as baby carrots, raw baby beets, cauliflower, peppers, radishes, cucumber, freshly podded peas, asparagus
1eating apple
1 tablespoonsunflower seeds
15gfresh dill
or mint
1 tablespoonbalsamic vinegar

Instructions
Step 1
I like to pop the rolls into the oven and turn it on to a low temperature so they can warm through while I prep everything else.
Step 2
Lay out a clean tea towel. Wash and trim all your veg, deseeding any peppers and the apple, then pile in the middle of the tea towel with the sunflower seeds. Tear over the dill or mint leaves, then pull up the edges of the tea towel to make a bundle. Holding it firmly, bash and squash it with a rolling pin to crush up all the veg. Simply stop when you think everything is an agreeable size to eat. As crazy as it might seem, by squashing up the veg you create more surface area for the dressing to stick to, you start to break down hard vegetables, and in turn they start to release their natural juices and flavours, which makes it all taste and eat even better.
Step 3
Tip the veg into a bowl and dress with the vinegar and 1 tablespoon of oil, then season to perfection. Halve your warm rolls and spread the bases with houmous and the lids with cottage cheese. Peel, destone and finely slice the avocado and layer on top of the houmous. Pile as much of the dressed squashed veg on to the bases of the rolls as you can, pop the lids on and squeeze together. Serve any remaining veg on the side, and get stuck in!
