Instructions
Step 1
Cut your pumpkin (or squash) into small cubes and set aside.
Step 2
In a pan over medium low heat, drizzle olive oil, add chopped shallot and some fresh rosemary and sizzle for a couple of mins.
Step 3
Add your diced pumpkin along with a couple of ladlefuls of boiling water, season with salt and pepper, cover with a lid and cook for about 15 mins or until soft.
Step 4
Stir occasionally.
Step 5
Now, add your cooked pumpkin into a food processor along with heavy cream, mascarpone, tomato paste (optional) and a pinch of smoked paprika.
Step 6
Blend everything until smooth then add your sauce to a pan over low heat and simmer for 5 mins.
Step 7
In the meantime, boil your pasta until al dente, drain and add it to your sauce along with some pasta water if necessary.
Step 8
Toss well over the heat and serve with some grated Parmigiano on top.
