The Perfect Shakshouka

This North African way of preparing eggs has such a sophisticated flavor yet it's so simple to make. It's a well balanced meal with sweet peppers, tomatoes and poached eggs all in one pot. The sauce from the tomatoes and peppers envelope each egg leading to a nice perfectly poached egg in each pocket. You just need a lidded pan (and the food ingredients 😅) and you're set!

Step 1
Heat the cooking oil on medium heat in a cooking pan with a lid and add in the diced onions and garlic. Mix and cover the pot for 5 minutes.

Remove the lid and check the onion color. Mix and cover until the onions begin to brown. Add in the bell peppers and tomatoes and mix well. Cover the lid and allow them to soften for 5-8 minutes.

Mash the tomatoes together and allow to simmer. Add spices and mix well. Taste the sauce, add salt or spices to your taste preference.

Poke pockets in the tomato and pepper sauce to place each egg into.

Once all eggs are placed in the pan, cover and let them cook for 4-8 minutes depending on how runny you like your yolks.

Garnish with a small squeeze of lemon juice, salt and pepper and fresh chopped parsley.
