½ tspgarlic salt
½ tsponion powder
1 tsplemon pepper
½ Tbspolive oil
8 ozmushrooms
2sweet potatoes
medium, diced
12 ozbroccoli florets

Instructions
Step 1
1. Preheat your oven to 400°F. Line a large baking sheet with foil (or two medium sized pans if yours isn’t that big!).
Step 2
2. Add your diced sweet potatoes to the pan with about 1/2 tbsp olive oil. Season with a little bit of salt & pepper to taste. Make sure the potatoes are fully coated in the seasonings & oil. Bake for 10 minutes.
Step 3
3. While the potatoes are cooking, season your chicken with all of the seasonings & 1/2 tbsp olive oil.
Step 4
4. Scoot the potatoes towards the outside of the pan. Add your remaining veggies to the outside of the pan with the sweet potatoes. Please the chicken in the middle of the pan.
Step 5
5. Season the veggies with the veggie seasonings and remaining 1/2 tbsp olive oil. Mix with your hands well to make sure everything is fully coated.
Step 6
6. Bake for 25 minutes, or until the chicken is fully cooked through and enjoy! Top with your favorite sauce if desired. I did some sugar free ketchup.
