Step 1
Using a fork, mash the chickpeas in a bowl, using a tablespoon of the oil to loosen the mash a little. It can stay as lumpy as you like!
Step 2
Toast the bread lightly and slice into fingers and arrange on a plate.
Step 3
Pile the smashed chickpeas onto the toast fingers, garnish with the chopped fresh parsley and drizzle over the rest of the olive oil.
