We're kind of obsessed with our air fryer, especially when we can whip up the most crisp on the outside, soft and fluffy on the inside, Air Fryer Potato Wedges...without all the deep frying oil mess! Our recipe is super simple and so so good!

Step 1
1. Cut potatoes into even wedges lengthwise (about 8 wedges per potato).
Step 2
2. Submerge potatoes into cold water and soak for 1 hour.
Step 3
3. Drain fries and thoroughly dry between two clean towels.
Step 4
4. Transfer fries to a clean, dry bowl and toss together with olive oil, cornstarch, garlic powder, salt, and pepper.
Step 5
5. Spray air fryer basket with cooking spray and line with a single layer of fries.
Step 6
6. Air fry French fries at 400˚F for 8 minutes (preheating air fryer prior to using, if needed).
Step 7
7. Flip fries and continue to air fry for an additional 5 to 6 minutes.
Step 8
8. Remove from air fryer basket and transfer to a clean bowl.
Step 9
9. While fries are still very hot, toss together with parmesan and chives or parsley (and more salt as needed).
Step 10
10. Transfer fries to a plate and top with more grated parmesan and parsley or chives. Serve.
