Bean Stew because winter is here!
I’m here to tell you that canned beans are your best friend! Buy them on sale and store them for a rainy day, literally!!
I based this recipe off something I ate in Turkiye which was beans cooked all day long in a buttery tomato sauce 🤤

Instructions
Step 1
Note: If you choose to use dried beans, soak overnight.
Step 2
Drain and rinse beans.
Strainer
Step 3
Cut and process tomatoes (you can grate if you prefer)
Step 4
Finely diced onion (I used a hand chopper)
Step 5
Add oil to pan, add onion and lightly sauté, add pastes and paprika, mix to combine, transfer beans, stock, puréed tomatoes, S+P, butter and bring to a boil. Then simmer for 15 mins. Turn off and allow the beans time to absorb the butter and sauce (check after 15 mins)
Frying Pan
Step 6
Slice up your onion and squeeze with lemon and serve them raw with your beans together with a side of rice or crusty bread… whatever warms your soul ❤️
