Instructions
Step 1
Bring a large pot of water to a boil. Arrange a backing rack in the middle of the oven and heat the oven to 425ºF.

Peel and trim off the ends of jicama, cut into 1/4-inch-thick slices (making sure to peel deep enough to get to the white part). Stack a few jicama slices at a time, cut the slices lengthwise into 1/4-inch-thick matchsticks.
Step 3
Add sliced jicama to boiling water and cook about 10 minutes until crisp-tender when pierced with a paring knife. Drain and pat dry with towels.

Mix cooked jicama, olive oil, paprika, pureed garlic, fried onion, salt and black pepper in a bowl, transfer onto the backing rack. Arrange jiacama sticks evenly.
Step 5
Bake in oven until jicama fries are lightly browned and crisp around the edges, flipping them halfway through, cooking time is roughly 30 minutes in total.
Step 6
Garnish with chopped scallion, serve warm.
