Step 1
Prepare: Chop onions and bell peppers finely and mince garlic.

Preheat the pan on medium to high heat with 1 tbsp of olive oil. Put onions and peppers in the pan and let stay for 3 to give minutes, or until the onions and tender.

While the onions and peppers simmer, chop tomatoes into fine slices. When the onion is ready, add in garlic first, let simmer until fragnant, then add in tomatoes. Let fry for 2-3 minutes.

Add tomato paste (be careful not to add to much, rely on your sense of taste), chili sauce and a glass of water. Wait till the sauce boils and lower the heat. Add in the spices and mix well.

Once most of the water evaporates, take the eggs. Plop each one directly into the sauce not too close to each other.

Wait for the egg white to fry and become white. Try not to touch the sauce or eggs at this point.

When the dish is done, add a sprinkle of parsley and serve in the pan. Good morning!
