CHICKEN IN PEANUT SAUCE

A easy, tasty dish that I like to call 'Cheats Chicken Satay'. Really full of flavour and could easily be transferred to a vegetarian dish if you so chose.

Instructions
Step 1
Heat Butter or Oil in pan - medium high heat. Add onions, garlic and curry powder. Saute until onions have softened.
Step 2
Add Chicken and cook for 5-7 minutes
Step 3
Add Peanut Butter, Mustard and Stock and stir until blended and mixed through
Step 4
Cook for another 10 minutes, you can add more stock to thin out the sauce or if you want more of a 'stir fry' you could add some fresh after 5 min or so.
Step 5
Add honey and tabasco (to taste)
Step 6
Serve with Rice and vegetables, or whatever your preferred side dishes are.
