Instructions

Step 1
Put the flour in a bowl and make a hole in the middle.
Step 2
Add the eggs in the middle and incorporate until it becomes a dough.
Step 3
Get the dough out of the bowl and cover it in olive oil, put the dough in thin foil and put it in the fridge for 30 mins
Step 4
Flatten the dough and cut in strips as tagliatelle
Step 5
Lay them on a flat surface covered in flour while we prepare the sauce.
Step 6
Melt the fat in a big pan on medium heat
Step 7
Add all these diced ingredients and sautรฉ them until it becomes a nice colour.

Add the meat and fry on high heat.

Add the red wine and let it simmer until the wine evaporates.
Step 10
Turn the heat on low and add the tomatoe paste and let it simmer for at least 1h. Add a little water if necessary (it needs to be added constantly for it to boil for 1h)

Boil the pasta Al dente and add it to the sauce along with the parmigiana.
