Soak cashews and prep vegetable broth

Slice potatoes and cut leek and soak leek

Preheat oven 180. Fry leek and add tumeric and chilli flakes

Make the sauce. Add everything in blender. (Big tub)

Spray tray and layer the potatoes on the tray, add the leek mixture and cover with sauce, sprinkle with smoked paprika and Italian herbs. Put in oven for 180 degrees for 35-40minutes.
