Instructions

Step 1
In a large dish, add EVOO, juice of one lemon, za’atar, garlic powder, crushed red pepper flakes, sea salt, and black pepper. Mix together, then add your raw chicken and marinate.
Step 2
Dice your tomatoes, red onion, and cucumber, and add to a bowl. Add fresh chopped parsley, juice of half a lemon, EVOO and sea salt. Mix and set aside.
Step 3
Broil chicken on high (500°F) until it reaches an internal temp of 165°F (~10-12 mins depending on the thickness of the chicken), making sure to flip halfway through.
Step 4
In a bowl, add brown rice, romaine lettuce, tomato-cucumber salad, olives, pickled onions, and hummus. Top with chicken, tahini, za’atar and fresh parsley. Squeeze some fresh lemon juice to finish and enjoy!
