Instructions

Step 1
Finely slice the red onion and put in a small bowl with the white wine vinegar and a pinch of salt. Toss and set aside for 5-10 minutes.
Step 2
Put the lemon juice, olive oil, Dijon mustard and honey in a clean screw top jar and shake to mix.
Step 3
Finely slice the radishes. Finely dice the gherkin. Cut the tomatoes into thick slices. Roughly chop the dill.
Step 4
Put the lentils, radishes, spinach, gherkin and soaked onions in a mixing bowl and pour the dressing over. Toss everything together.
Step 5
Add the tomatoes and most of the dill and gently stir through.
Step 6
Tip out onto a serving platter and scatter with the remaining dill to serve.
