Step 1
Sautee garlic and shallots in oil until aromatic then add thyme stems, white wine and lemon juice. Reduce by 3/4. Add heavy cream and bring to a boil. Simmer for 30 minutes and season to taste. Strain through chinois then add thyme leaves. Whip in butter when ready to serve.
