Macaroni Pie, Fried Rice, Potato Salad and Bbq Baked Chicken. A Classic Trini Sunday Lunch 🇹🇹❤️ PART ONE Made with love from my Caribbean household to yours😊🇹🇹❤️. Some ingredients may be too much for some people but the truth is us caribbean people use alot of seasoning in our foods. But dont worry you'll be fine🤪 I will list some options for the folks that dont use certain ingredients in the instructions below. Make sure to follow this recipe exact. I dont want you to complain of the food being tasteless or too salty if not enough ingredients is used. ❤️😊🇹🇹 I will be uploading another Classic Sunday Lunch soon since this is not the only recipe we cook on a Sunday here in Trinidad and Tobago🇹🇹🇹🇹🇹🇹 I also take request if you have a recipe in mind but not sure what ingredients you should use. Contructive criticism is allowed. If the recipe is too much for you, you can always remove whatever but be careful, that's what makes this recipe unique😬🇹🇹

Instructions

For The Chicken

Step 1
Add all ingredients to your freshly washed chicken. Lime is usually used in most households to help cut the freshness. However whenever i ran out of Lime i use flour as my second option which also help to cut out the freshness😊 Mix everything together using a metal spoon. Some like to use their hands like me, i usually wash my hands first then get in and make sure every piece is covered nicely😩 Pour the seasoned chicken into a semi wide deep pot on low heat and place a lid over it to allow the chicken to steam🔥Be sure to check it every 30 seconds because we dont want anything to burn over here😬

For The Potato Salad

Peel the 6 potatoes and cut into cubes. If you're like me, i use a deep sauce pan to boil my potatoes and eggs together. Add a little salt so that you don't need to add any extra while making the salad🤌🏻. I usually dont use a timer for this part so once the potatoes are soft and i do this by taking a fork and cut through a single cube and once its break apart easily its done👍🏻 You can leave the eggs to boil for another 2 or 3 minutes. Drain the potatoes and let the water run slowly on it a bit to even out the heat. Once the eggs are done, take out the shells and cut into tiny cubes, putting them with the potatoes. Eggs are optional, if you don't want it you don't need it! Add the all purpose seasoning, sugar, celery and honey mustard and mayonaise. This is optional but i use to watch my mother put a tin of peas and carrots in it, which to me is not nessessary so if you're a fan of being extra you can add that too. If you have any other ingredient you like to use you can also add it as well 😊🇹🇹 Now mix everything together and be sure to taste it to make sure it has enough salt to your liking❤️Allow it to cool before refrigerating.

For The Fried Rice

This step uses a video which i saw on YouTube. I will link the video for the fried rice. I always use that recipe whenever i want to make fried rice and it always comes out perfect. I left out a 1 or 2 ingredients but you can add them to your dish.

For The Macaroni Pie

Step 4
I used elbow macaronis in this recipe but you can use any kind of macaroni you want. Add your macaroni of choice to a pot of half filled water. Once the water beguns to boil add a sprinkle of salt and some oil to prevent the macaroni from sticking together.❤️🇹🇹 Once that is done Strain into the colander, now we can start to create our cheese sauce🤤 in a large skillet or deep frying pan, or whatever dish you use to make your cheese sauces, add the butter and unsalted butter. Let that melt and add the pimentos and onions. Saute for atleast 3 minutes on low heat. After 3 minutes you can now add the evaporated milk, followed by the seasonings. Black pepper, all purpose seasong, cayenne pepper and paprika. (You can also use powdered milk if you don't have evaporated milk. Add 4 tbsps to 1 cup water, more if needed). Use a whisk to mix it together. Keep on low heat and allow to simmer for another 3 minutes or more. Remember to save a generous amount of cheese to top the pie before baking‼️ Add all the grated cheese bit by bit using the whisk to help melt everything together. You should start noticing the sauce getting a bit thicker once you gradually added all the cheese. Use a table spoon to taste your sauce and make sure it has enough flavour to your liking. Add more salt if needed. ❤️🇹🇹 In my country we don't use any timers. Its usually until we think its done then we move on to the other step😅. So once the sauce it finished pour the macaroni in and mix until its covered completely. Do not pour into the baking dish yet. Let it sit in the sauce for 5 minutes. After that 5 minutes you can now pour into a baking dish and put inside your oven. My oven goes up to 240° C so if your oven is close to that or higher then go ahead, but be sure to check on your pie often. As i said we dont want anything to burn🔥 The only thing to do after everything is done is to plate up for the family and dig in 🤤🍴🍽 Btw, who is washing up all those dishes you just used????👀 Lol ENJOY‼️❤️🇹🇹😊
