Plant Based Beer Battered "Fish" Tacos

Taco night is one of our favorite nights of the week. I love trying new filling options, and this one did not disappoint. I serve mine with home made pico de gallo and guacamole. Don't forget the hot sauce.

Instructions
Step 1
Make batter by combining all the batter ingredients in a medium bow. Stir until mixture is the consistency of pancake batter.
Step 2
Place foil in the air fryer basket, and spray with cooking oil.
Step 3
Dip artichoke hearts into the batter, then place in the air fryer basket. Repeat with remaining artichoke hearts. I do not thaw out the artichokes, as I found that they are easier to work with.
Step 4
Place into the air fryer, and cook at 375 degrees for 8 minutes, the flip or toss, and cook for another 8 minutes.
Step 5
Serve on corn tortillas with your favorite taco fixings,
