Ingredients
4 servings
2 ½ cupssparkling water
cold
3avocados
medium sized, ripe, chilled and chopped
1 cupplain fat free yogurt
not Greek style
¼ cupfresh basil
chopped
1 tablespoonapple cider vinegar
1 ¼ teaspoonskosher salt
1 teaspoonlime zest
2 tablespoonsfresh lime juice
¼ teaspoonblack pepper
14 ozextra firm tofu
drained
¼ cupall-purpose flour
¼ cupcornstarch
1 tablespoonolive oil
2 tablespoonsradishes
thinly sliced
fresh basil leaves
Instructions
Step 1
1. Combine sparkling water, avocado, yogurt, chopped basil, vinegar, salt, lime zest, lime juice and pepper in a blender and process until smooth
Step 2
2. Cover and chill for about 30 minutes
Step 3
3. Place tofu on a paper towel lined plate. Top with paper towels and a plate and let stand for 15 minutes. Cut into three quarter inch cubes
Step 4
4. Combine flour and cornstarch in a bowl. Dredge tofu in flour mixture, shaking off the excess
Step 5
5. Heat oil in a large nonstick skillet over medium high. Add tofu, cook until browned on all sides, about 5 minutes
Step 6
6. Divide soup among four chilled bowls. Top evenly with tofu and radishes. Garnish with basil leaves and serve immediately
