Ingredients
2 servings
200gskinless chicken thighs
cut into bite-sized pieces
salt
pepper
1clove of garlic
minced
¼ cuplow sodium chicken broth
2 Tbspolive oil
1 cupbutton mushrooms
sliced
4 cupsbroccoli
cut into small florets & steamed
4 cupssweet potato
already roasted
sesame seeds
1shallot
finely cut

Sauce: Make this first
Step 1
Combine all Sauce Ingredients and warm in a small pot for a few minutes or until the corn starch and spices are nicely dissolved.

Preheat the oven
Step 3
Roast the Sweet Potato (if you haven't already done this) by placing bite-sized pieces on a baking tray with a coating of 1 Tbsp olive oil and bake for 20-30minutes, turning half-way. Cook time will vary depending on the size of the potato pieces.
Step 4
Steam broccoli florets
Saute garlic in olive oil for 1 minute. Add chicken to the pan and stir-fry until the pieces are browned. Add the mushrooms and saute until softened. Pour chicken broth into the pan, add teriyaki sauce, stir and simmer.
Add all ingredients at the end to heat through again.
