Instructions

Step 1
Cook the bacon to preference and then set aside on a plate. Be sure to cut up the bacon before you add it to the sauce, this can be done now or later.
Step 2
Crush 1-2 cloves garlic per person into the leftover bacon grease and add the paprika and season all.
Step 3
Immediately after the garlic so it doesn't burn add the tomato puree and about 50ml water. Puree is to taste but generally at least a very heaped teaspoon for one person.
Step 4
Stir the mixture around and 'tap' at the puree until there are no more chunks floating around. I generally start cooking the pasta around this time.
Step 5
Add the cream and stir until mixed.
Step 6
Once the sauce begins to gently simmer add the parmesan and stir in slowly. If preferred leave a little parmesan to sprinkle over the top at the end.
Step 7
Once the cheese has melted turn down the heat to low. If you haven't cut the bacon into chunks yet now is the time to do so, once cut add to the sauce and stir in.
Step 8
The sauce will happily sit simmering until the pasta has finished cooking, just be sure to keep stirring and scrape off the parts of the sides of the pan back into the sauce.
Step 9
Once the pasta is drained the sauce can be added to the pasta and mixed. Now ready to serve.
Step 10
When serving the leftover parmesan and the Italian herbs can be sprinkled over the top.
