Instructions

Step 1
Preheat oven to 180’C
Step 2
Cut aubergines into 1cm slices. Place in a roasting tray, drizzle with olive oil and roast for approx 20 minutes, until aubergines are soft and just starting to brown.
Step 3
Meanwhile pour the passata into a pan, add salt, pepper, sugar and red wine. Place over a medium heat for 20 - 30 minutes until reduced.
Step 4
Later the aubergines, tomato sauce and mozzarella with torn basil leaves in an ovenproof dish. Roast in the oven for 25 minutes until golden and bubbling.
