Instructions
Step 1
1. Preheat your oven to 400°F. Line 2 large baking sheets with foil and put a light drizzle of olive oil or some nonstick spray to prevent sticking.

2. Lay your sweet potato pieces flat on the baking sheets. Make sure none are overlapping/stacked on top on each other. Drizzle with some olive oil & season with salt & pepper. Bake for 25 minutes, or until they are soft enough to “smash”.

3. Use a fork to lightly smash each piece. Don’t push too hard or they will break apart and be mashed!
Step 4
4. Mix together the butter, garlic, and parsley. Brush this mixture among the tops of the potatoes.
Step 5
5. Turn your oven onto broil and broil until the edges start to crisp, about 5 minutes.
Step 6
6. Sprinkle the Parmesan cheese on top immediately after removing from oven. Allow to melt and enjoy!
