Instructions
Step 1
Heat oil over medium-high heat in a frying pan. Toss squash and walnuts into pan and sprinkle with salt and pepper. Sauté just until squash becomes translucent and sears a bit.
Step 2
Push squash to one side of the pan and crack your eggs in the open space. Sprinkle with salt and pepper. When egg white is mostly opaque, flip eggs and cook for 1-2 minutes more before removing from the heat.
Step 3
Just before serving, top with chives and cherry tomatoes.
