Green Beans w Pecans and Shiitake Mushrooms
Add salt if needed. Notes: I needed way less time and heat for this, I burned it the first time. I did 450F for 13 min the second time, might try a little less heat the third time. Also the vinegar and soy sauce is strong, suggest adding less and then seeing how you like it first. I also do about half the oil and it's enough. Also cut the mushrooms very thick if you don't want them to burn.

Step 1
Heat the oven to 475°F. On a rimmed baking sheet, toss the green beans and mushrooms with the oil, 1 tablespoon of the soy sauce and ¼ teaspoon each salt and pepper. Distribute in an even layer, then roast until tender and lightly browned, about 15 minutes. Mix the remaining 1 tablespoon soy and the vinegar. When the vegetables are done, immediately drizzle with the soy-vinegar mixture and carefully toss. Season with salt and pepper. Transfer to a serving dish and sprinkle with the pecans.
