Step 1
preheat oven to 190oC
Step 2
put the black pudding slices on a baking tray, drizzle with oil and cook for 3-4 minutes on each side

meanwhile, poach the egg in a pot of simmering water for 3-5 minutes
Step 4
mash the avocado in a bowl with the back of a fork and add in the salt, pepper and chilli flakes
Step 5
toast the bread
Step 6
to serve spread the avocado onto the toast, followed by the black pudding, and top with the poached egg
