Instructions

Step 1
Bake the brownie mix according to box directions. Fill a mini cupcake pan with the brownie batter. bake at 325° for 20 minutes. While brownies are baking make the filling and chocolate covered coffee beans. Take 24 cookies and take one half of the cookie off so you are left with the filling and the other half of the cookie. Pace the cookies in a Ziploc bag or bowl and crush. Add the Cool-Whip to the cookies and mix well. Refrigerate until ready to use. Next take your milk chocolate and melt it in the microwave for approximately one minute. Stir your coffee beans into the melted chocolate. Take a fork and scoop out two to three beans and place on parchment paper so they form little clusters. Let cool and harden. When brownies are done take them out of the oven and while still warm, take a shot glass and gently make an impression in each cup. Let cool. Gently twist the rim of the brownie until it loosens and then lift out of the pan. Brush a very small amount of Kahlúa (optional) in each brownie cup. Next fill each brownie cup with the cool-whip mixture and top with a coffee bean cluster. Chill until ready to serve.
