Instructions
Step 1
Heat a drizzle of olive oil in a medium skillet. Add all but 1/4 cup of red onions and cook, stirring until softened and lightly browned, 3-5 minutes.
Step 2
Add ground beef and a pinch of salt and pepper; cook, breaking up the meat into smaller pieces until cooked through, 3-5 minutes. Add taco seasoning and 1/2 tsp garlic powder; cook for 30 seconds, until fragrant. Stir in 2 tablespoons of water and bring to simmer for about 30 seconds, or until slightly thickened.
Step 3
While beef is cooking, combine the sour cream with a pinch of salt and 1/2 tsp garlic powder. Stir in 1 tsp water at time until the consistency is slightly runny and smooth. Season with additional salt and pepper if desired and set aside.
Step 4
Once beef has cooked, assemble tacos. Fill with beef and top with lettuce, sour cream mixture, and chopped onions.
