Instructions
Step 1
chop your peppers, onion, and garlic. Toss in a pinch of salt, and a pinch of sugar and mix around in a bowl. Add a teaspoon of olive oil to the pan, heat on medium low and add veggies. Cover and let caramelize.
Step 2
Once veggies are caramelized, take off the heat. get a pot and brown your beef, make sure to cook through And crumble.
Step 3
Now that the veggies and beef are done, mix together in same pot you browned beef in. Add your spices. ( I listed what I used, feel free to spice it up how you like). Turn heat on low for about 5 mins, allowing the flavors to combine.
Step 4
After 5 mins, add the beef stock and water. Bring to a boil.
Step 5
Almost as soon as it boils, add the rice, mix thoroughly and turn heat down to a simmer and cover for roughly 24 mins or until rice is cooked.
Step 6
If rice is cooked, remove from heat and add your cheese. I mixed in white American, then shredded cheddar on top. Return the lid and let sit for 10 mins or until cheese is Melted.
Step 7
Serve in a bowl, or in a tortilla. I chose tortilla and was not disappointed. You could probably use tortilla chips as well and make a nacho type dish.
