Sweet Potato & orange soup with spicy maple granola.

Instructions

Soup

Step 1
Preheat oven to 400°F (200°C).
Step 2
Line a baking tray with parchment
Step 3
Zest oranges and reserve zest for later.
Step 4
Cut oranges in half.
Step 5
Place oranges, sweet potatoes and onions on baking tray.
Step 6
Bake until oranges begin to caramelize and sweet potatoes are with no resistance, about 1 hour and 20 min
Step 7
Remove tray from oven and let cool for 10 min.
Step 8
Peel the potatoes and onions and discard skin.
Step 9
Roughly chop, keeping them each seperate
Step 10
Heat oil in a large pot over medium high heat.
Step 11
Place garlic and onions in the pot with the salt and cumin.

Cook until onions are to turn golden, about 5 minutes.

Add in sweet potato and stir with a wooden spoon.
Step 14
Use the spoon to mash the potato as you stir

Firmly squeeze the roasted oranges to release their juices into the pot.

Add in the zest.
Step 17
Pour in the vegetable stock then increase heat to high.

Bring mixture to a boil, then immediately reduce to medium-low and simmer for 20 minutes, stirring intermittently.

Blend soup with an immersion blender until smooth.

Stir in apple cider vinegar and continue to simmer for another 5 minutes.

Serve soup and top with Spicy Maple Granola.

Granola

preheat oven to 400f. line a baking tray with parchemnt

place all the ingredients in a bowl. stir until well combined
Step 24
pour mixture onto prepared baking sheet in an even layer. bake until golden and crisp, about 25 min.
