Garlic Mashed Potatoes

I love mashed potatoes with lots of garlic in it. Usually I would roast them in the oven, but this process is much quicker. By sautéing until the garlic is softened and then mashing it with the potatoes it provides that nice garlic taste. Don’t be afraid to add plenty of garlic! This will serve 4-6 just double ingredients if you need more

Ingredients

3russet potatoes
peeled and chopped
8cloves garlic
smashed
4 Tbspsalted butter
2 Tbspcream cheese
room temperature
½ cupmilk
salt
to taste
pepper
to taste

Instructions
Step 1
1. Wash, peel, and chop russet potatoes into approximately one inch cubes.
Step 2
2. Bring a pot of water to boil and season with salt.
Step 3
3. Once water is boiled, add the potatoes and cook for 20 minutes or until tender.
Step 4
4. In a pan melt butter and sauté the smashed garlic until softened and tender
Step 5
5. Cut off the heat and add cream cheese and milk. Whisk until it is smooth.
Step 6
6. In a large mixing bowl, add the cooked potatoes and mash. Slowly incorporate the garlic cream mixture and season with salt and pepper to taste
Step 7
7. Plate and garnish
