Mussels marinara is a traditional Italian dish that appears far more elaborate than the effort required! It’s simple, inexpensive, and delicious. Mussels are cooked in a marinara sauce flavored with parsley and garlic.

Ingredients

3 tablespoonsextra-virgin olive oil
4cloves garlic
finely chopped
1 cupwhite wine
2cans chopped plum tomatoes
2 tablespoonsparsley leaves
resh, chopped
4 poundsfresh mussels
debearded, scrubbed and rinsed
2 pincheskosher salt
1 pinchblack ground pepper

Step 1
If you're making this with pasta, heat a large pot of water and cook the pasta according to package directions.
Mussels
Step 2
In a large sauté pan, heat the oil over medium heat.
Step 3
Sauté the garlic until that is lightly browned.
Step 4
After a few minutes, add the mussels, wine, and plum tomatoes, then cover and cook for about 10 minutes, or until all the mussels are open.
Step 5
Adjust the seasoning of the sauce as needed with salt and pepper.
Step 6
Place the mussels on a serving platter. (Any mussels that do not open should be discarded.) Coat the mussels with the sauce, fresh chopped parsley, and lemon wedges on the side.
