Instructions
Step 1
Roast your tomatoes in the oven for 30 mins with some extra virgin olive oil, a pinch of salt and ground pepper and some fresh rosemary (190C/375C).
Step 2
Soak your cashews some boiling water for 30 mins.
Step 3
In a blender. add your cashews with the water, your roasted tomatoes, garlic clove and a pinch of salt and a drizzle of extra virgin olive oil.
Step 4
Mix everything together until super creamy, adding some more boiling water if necessary.
Step 5
Boil your linguine then mix them with your sauce. Stir super sexy and add a couple of spoons of pasta water if needed!
Step 6
Garnish with some fresh parsley and enjoy.
