Fried Zucchini and Yogurt Sauce (Makhshi مخشي Deconstructed)

This is a delicious take on the middle eastern dish of traditionally stuffed and fried zucchini with yogurt stew. It's a tedious time consuming dish so skipping the coring step saves a lot of time here 😅

Instructions

Step 1
Wash and slice zucchinis into roughly 1/2 inch thick slices
Step 2
Fry slices of zucchini in a large skillet with olive oil, flip them and as they soften, poke holes in them and flip again until both sides of each slice is golden brown.
Step 3
You'll have to fry the zucchini in batches to not overcrowd the pan and set aside as they cook.
Step 4
Once all the zucchini is cooked, in the same pan, add your diced onion and cook until translucent, then add your ground beef and spices and mix well and cook until the meat is browned.
Step 5
Add into the pan the fried almonds and fried zucchini. Mix together and set aside.

Yogurt Soup

Step 6
Bring your chicken stock to a boil then add the yogurt into it.
Step 7
Mix 2 heaping tablespoons of cornstarch into hot water so it doesn't get clumpy and add it into the soup.
Step 8
Add your citric acid, Vegeta (or chicken bouillon powder) onion powder and salt to the soup and whisk together until it comes to a boil.
Step 9
Add salt and taste test until the stew is to your taste preference 😋
Step 10
Plate the zucchini and yogurt stew together and top with parsley and enjoy!
