This colourful tofu sushi bowl is one of our go-tos as it’s so easy to put together, nourishing and absolutely delicious! I can never have enough 😍 The best part is it tastes just as good cold, so you can pack the leftovers for work, and with 30g of protein combined with fibre and healthy fats, it is sure to keep you feeling full and satisfied for the day ahead. You can use the leftover marinade for more tofu, to sauté some veggies in a stir fry, or mix it in with your rice.

Instructions

Step 1
Combine all the tofu marinade ingredients. Stir in the tofu and allow to marinade for up to overnight (the longer, the more flavour it will have)
Step 2
Bake the tofu in the air fryer at 350 degrees F (180 C for 15 minutes or 20 minutes at 400 degrees F/200 C in the oven).
Step 3
To build a bowl, add ½ cup of rice, some tofu, cucumber, avocado, and radish. Top with toasted sesame seeds, finely diced spring onions, pickled ginger, and sriracha mayo.
Step 4
You can use the nori sheets square to scoop up the delicious food or sprinkle it on top. Enjoy 🤍
