Vegan Stuffed Shells

Since going plant based, I have missed some of my favorite Italian dishes. Stuffed Shells always made me happy, and these gave me the same feeling. You can use a store bought marinara, or make your own. Here is my recipe for an easy marinara, https://whi.sk/Gqmi0. To make healther, omit the olive oil.

Ingredients
4 servings
Filling
1 cupraw cashews
soaked
¼ cupwater
1 cupfrozen spinach
2 Tbsnutritional yeast
0.5juice of lemon
1 Tbsapple cider vinegar
1clove of garlic
Breadcrumb Toping
Instructions
Step 1
Cook pasta in boiling water for 10 mins. Bring marinara to a boil, and let simmer while preparing the filling, and cooking the pasta.
Step 2
To make the filling, put all ingredients into a food processor, and blend on high.
Step 3
Prepare a baking dish with cooking spray . Pour half the sauce to cover the bottom of the pan.
Step 4
Stuff shells with the filling, and line in the the baking dish. Pour sauce over the top, and top with breadcrumb mixture.
Step 5
Cover with foil, and put into a preheated oven at 400 degrees for 10 minutes. Uncover, and cook for another 10 minutes.
