Chickpea “Tuna” Salad Sandwich
*if you are eating this in a sandwich it makes about 5 sandwiches, but if you are eating it alone as a salad I would say it make about 2/3 servings*
Great vegetarian option for a tuna salad! You can sub mayo for vegan mayo, it’s just in my household we usually only have regular mayo on hand

Step 1
Smash you chickpeas until they’ve kind of become a paste. I use a fork
Step 2
Drain and add you peas
Step 3
Add your chopped celery, carrots and onion
Step 4
Add your mayo and seasonings and mix well
Step 5
Toast your bread, slice your tomatoes and prepare your lettuce. You could also simply dice your tomatoes and add them to the mixture and eat this as a salad. Whatever floats your boat
