The amount of liquid has been revised so yours won’t boil over in the oven like mine did! I used a Gorgonzola blue cheese, which was perfect in this application.

Pomme Pavé
1.5kgPotatoes
2mm slices
1clove garlic
40gbutter
1onion

300gsoft blue cheese
300mlcream
200mlmilk
½ tspnutmeg
½ tspwhite pepper
1 tspsalt
Green Beans
500ggreen beans
tops removed but tails remaining unless they look gross
1 Tbspolive oil
1 Tbspbalsamic reduction
Honey Almond Praline
Instructions
Step 1
Preheat the oven to 175 degrees Celsius.
Step 2
Make the Pomme Pavé by first cutting the garlic clove, and rubbing it around the edge of your baking dish. I used a 30 cm heavy bottomed glazed dish. Then butter the dish liberally, leaving aside any extra. Arrange half the potatoes in slices around the dish. I find alternating clockwise and anticlockwise circles works well for me. Then sprinkle the chopped onion over the half of the potatoes already arranged, and sprinkle knobs of creamy blue cheese all over. Arrange the remaining potato over the top, pressing down so that it all fits. In a jug, mix together the cream and milk, as well as the nutmeg, white pepper, and salt. Pour this gently all over the potatoes. Sprinkle the remaining blue cheese, and the remaining butter over the top, and bake uncovered for about 90 minutes.
Step 3
While that’s cooking, you can make the almond praline. Melt honey and sugar in a small non-stick pan until the sugar looks melted, then add the chopped almonds. Allow the mixture to bubble for a few minutes and darken, but ensure you take it off the heat before it burns. Spread it out on a silicone baking sheet or baking paper and allow it to cool and harden completely. Give it a pinch of salt once you’ve put it on the mat to cool. When hard, break into smaller pieces and chop, or even better blitz in a food processor in bursts to make smaller crumbs.
Step 4
Arrange the beans in a single layer on a baking sheet, patting them with paper towel to ensure they are completely dry. Drizzle olive oil and a sprinkle of salt, then add to the oven for the last 20 minutes of cooking. When cooked, (I like them cooked but not too soft for this), drizzle the balsamic vinegar reduction and toss through. Sprinkle on top the praline.
Step 5
Serve slices of the Pomme Pavé with the balsamic green beans. Enjoy.
