juice of lemon

4 Tbspolive oil
2 Tbspbalsamic vinegar
1 Tbspmustard
2 tspdried mint
1 Tbspgarlic paste
1 tspsalt
1 tspblack pepper
Salad
Instructions
Step 1
Chop all vegetables and add into a bowl on top of the lettuce and arugula
Step 2
Mix all dressing ingredients and set aside
Step 3
Plate your portion of salad and add a few tablespoons of dressing to it
Step 4
Enjoy with a chopped up hardboiled egg for that extra protein and vitamins
