4tomatoes
medium-sized, any color),, very thinly sliced
1cucumber
medium-sized, very thinly sliced
0.5red onion
very thinly sliced
1garlic clove
finely grated
1 cupasparagus
chopped
1 cupfresh basil
loosely packed, finely chopped
1 cupfresh parsley
loosely packed, finely chopped
½ cupfresh dill
loosely packed, finely chopped
1 tablespoonlemon juice
3 tablespoonsorange juice
1 teaspoondulse flakes
atlantic, more to taste, optional
6 cupsleafy greens
loosely packed, such as romaine, butter lettuce, spinach, and/ or mâche
2 tablespoonsorange juice
freshly squeezed, or lemon
Instructions
Step 1
Place the tomatoes, cucumber, onion, garlic, asparagus, and herbs in a medium-sized bowl. Toss until evenly mixed. Add the lemon juice, orange juice, and dulse flakes. Toss again and set aside. Place the leafy greens of your choice in a large bowl and top with freshly squeezed orange or lemon juice. Top with the cucumber and tomato mixture. Serve immediately or keep in the fridge until needed.
